  • 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons green curry paste
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small eggplant, cut into chunks
  • 4-5 kaffir lime leaves, torn
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • Fresh Thai basil leaves for garnish
  • Cooked jasmine rice for serving


  1. Heat the vegetable oil in a large pan over medium heat. Add the green curry paste and stir-fry for a couple of minutes until fragrant.
  2. Add the chicken pieces and cook until they turn white and are no longer pink in the center.
  3. Pour in the coconut milk and chicken broth. Stir well and bring the mixture to a gentle boil.
  4. Add the sliced red and green bell peppers, eggplant, kaffir lime leaves, fish sauce, and sugar. Simmer for about 10-15 minutes or until the chicken is cooked through and the vegetables are tender.
  5. Taste and adjust the seasoning, adding more fish sauce or sugar if needed.
  6. Remove from heat and discard the kaffir lime leaves.
  7. Serve hot over jasmine rice, garnished with fresh Thai basil leaves.
